Flourless Almond Butter Cookies Recipe

Simple almond butter cookies require only six ingredients. Add your favorite chocolate chips, nuts, dried fruit, or M&Ms! 

– 1 cup creamy no-stir almond butter (250 grams) – ⅔ cup coconut sugar (100 grams) or brown sugar – 1 large egg at room temperature – 1 teaspoon pure vanilla extract – 1 teaspoon baking soda – ½ cup semi-sweet or dark chocolate chips (90 grams)



Preheat oven to 350°F (180°C). Reserve two large parchment or silicone-matted baking sheets. Stir together almond butter, coconut sugar, egg, vanilla extract, and baking soda in a large bowl. 


Stir in chocolate chips. Cookie dough onto baking tins using a 1.5 tablespoon scoop. Dough balls spread during baking, so leave room between them.


Bake until cookie tops are firm, 9–12 minutes. Cool the cookies on the baking sheet after removing them from the oven.
